Ahhh, the night before Christmas. As a parent, this can be one of the most trying nights. Our kids are so excited and anxious to get the holidays rolling and rip into those presents. They can hardly contain themselves. And, let's face it, we're excited too! That's why I developed a fun tradition for our family on the night before Christmas. I prepare a nice cozy, comforting dinner and put together a family "night before Christmas present."
Let's start with the cozy, comforting dinner. This year I plan to make this delicious Italian Meatball Stone Soup. It is absolutely fabulous! My kids love it! In fact, every time my son gets a clue I am making it, he gets so excited he can hardly wait to eat. And, best of all for me, it is a longer slow cooker option. I can throw it all in the slow cooker in the morning and it can cook all day. The flavors just keep getting better and better. Here's what you do - it's super easy!
To a greased slow cooker, add 1 lb. Italian-style frozen meatballs. I like to use this recipe for Italian Garlic Turkey Meatballs and make my own. These meatballs are delicious and are great to have on had for quick appetizers like barbecued meatballs or main dishes.
Pour in 32 oz. beef broth.
Add 2 (14.5 oz.) cans diced tomatoes with Italian herbs, undrained.
Add 3-4 medium potatoes, chopped.
Add 1 medium onion, chopped.
Add 1 Tbsp. Garlic Garlic™ Seasoning.
Add 1 (16 oz.) bag frozen mixed vegetables.
Stir to combine.
Cover and cook on low for 9-11 hours or until vegetables are tender. Your house will smell amazing when you get home and dinner will be all ready for you to enjoy!
Now for the family gift. I like to plan for a nice relaxing family evening. I start with getting everyone a new pair of pajamas. They can be holiday-themed or any pajamas of your choosing. I like to tie them up with a bow and add a cute personalized ornament.
Next, add in some hot chocolate, tea or warm beverage mix of your choosing, some microwave popcorn and a family Christmas movie.
Wrap it up in your favorite wrapping paper and add a nice big bow. You can also add a tag that says, "To Family: Open the night before Christmas" or something to that affect.
My kids love this tradition and it makes for a very cozy, quiet and relaxing evening. I hope your family will enjoy it as well.
