Monkey Muffins

There are days when I am so very good about eating healthy. For example, I really do love our Layered Greek Dip - it's filled with hummus, Spinach & Herb Seasoning, cucumbers and all sorts of whole-food deliciousness (the recipe is in the recipes section). Truly, it's delightful. Then there are the other days ... when nothing brings me more joy than a cupful of Monkey Bread ... drenched in Creamy Caramel Sauce. Oh mmmm ... mmmm ... my. Today is definitely an indulgence day. 

And ya know - it's Friday, right? All "lean" and no "luxury" makes Jane a dull girl. So I'm extra grateful today that some Tastefully Simple products can add flavor without fat AND that we also have a few little treats like Creamy Caramel Sauce. Hey - it's TS EatWell and all yummy ... So make some Monkey Muffins this weekend ... you deserve it, and they are super easy!

Monkey Muffins



Cut biscuits into small pieces; place in bowl. Toss with cinnamon and sugar until biscuit pieces are coated and separated. Divide biscuit cubes between 12 greased or lined muffin cups. Top each with 1-2 teaspoons of creamy caramel sauce. Bake as directed (e.g. 350 for 13-17 minutes). Serve warm with an extra drizzle of Creamy Caramel Sauce.

Tips and Hints

  • I used a large chef's knife to cut each biscuit into 16 pieces. I have also heard that a pizza cutter works well.
  • If you line your muffin tin with paper holders, remove them from the muffin tin and transfer them to a cooling rack soon after you take the pan out of the oven. If you don't, the caramel firms up in the pan and it's difficult to get them out.
  • These are best served warm from the oven, as they really firm up as they cool. You can also reheat them in the microwave for a few seconds with good results.
  • I have to say these are amazingly good and take very little effort. Your friends and family will love you!
