Have s'more fun with a s'mores buffet!

One of my favorite childhood memories is sitting around a campfire, marshmallow fork in hand, ready to assemble that most classic of camping treats: s'mores. More often than not, someone's marshmallow became a flaming torch and everybody ended up with sticky hands, faces and even hair. But, boy! Was that delicious!

I still love the traditional version of s'mores. But a few years ago I was asked to put together a s'mores buffet for my brother's wedding reception. I Googled the topic and … what a revelation! There are so many variations on the original that take s'mores to the next level of delicious. Simply swap out the main components – marshmallow, chocolate bar and graham cracker – with other ingredients, and you can create endless different flavors and textures.

Whether you are creating a special event like my brother's reception or simply gathering with friends and family around the backyard fire pit, a s'mores buffet is a fun way to celebrate the best of summer.

Start with the foundation of the s'more: the graham cracker top and bottom that sandwich the tasty innards. Grahams come in a few different flavors – cinnamon and chocolate, for instance. But why not think outside the cracker box and try something new, such as:

In addition to the usual milk chocolate squares, offer sweet alternatives like white chocolate, dark chocolate, peanut butter cups, caramel-filled chocolate squares and peppermint patties. If it's sweet and melts under a hot marshmallow, it works!

The marshmallow is the heart of a s'more. Plain 'ol vanilla mallows from the store are okay, but you can also find flavored versions in some stores and online. Specialty flavors that pair well with chocolate: coconut, caramel, lime, strawberry, chocolate.

Arrange your ingredients on trays or in baskets, assembly-line style, then hand everybody a toasting fork and let s'more fun begin!

Tips & Hints

  • You might include squeeze bottles containing caramel and chocolate syrup or fruits like sliced bananas or berries as add-on toppers.
  • Provide wet wipes on the buffet table to take care of those sticky fingers and faces.
  • Inexpensive mesh food covers are a good way to keep bugs away from the treats.
  • For an indoor s'mores buffet, nestle canned heat (like Sterno) in shallow bowls surrounded by glass gems for a simple, pretty campfire substitute. Indoor s'mores grills are also available. (Never use a charcoal or gas grill indoors.)
