Long ago and far away ... I was a Girl Scout. How I loved making pixie hats, "birdseed*" out of cereal and earning those badges! Scouting was also my first introduction to camping and some wonderful camp foods.
There were s'mores, of course, but also baked bananas*, cowboy sodas* and some pretty delightful foil dinners. The latter was always filled with a hamburger patty, potatoes, onions and sometimes carrots and they were delicious!
I have come to discover that foil dinners have gone gourmet, and there are hundreds of ideas for them out there. I'm head-over-heels for this chicken and tortellini version - give it a try! Super easy ... super delish!
*In case you're wondering:
- Baked Bananas: Slit a banana in the peel lengthwise, but not all the way through. Fill with mini marshmallows and chocolate chips. Wrap in foil; grill until warm and gooey. (Warning: messy! But so yummy!)
- Birdseed: 4-6 Girl Scouts each bring a box of their favorite breakfast cereal. Mix them all together. Serve in paper cups as a snack.
- Cowboy Sodas: Bite the ends off an old-fashioned peppermint stick (they are kind of soft). Take a room-temperature orange and roll it around on the table until it's good and juicy. Poke the peppermint stick into the orange and use it like a straw.
