Fresh Fruit Cookie Pizza

Spring is here (at least in theory!) and at our house, that means mud season! We have a dog, so once the spring thaw begins it’s a battle between me and the mud and the mud is usually winning. Ah, well. We love our little fur-baby, even if that means four paws and one furry belly depositing grit and grime all over the floors, bedspreads and car seats.

The change of the season also warrants a change of menu! Gone are the soups, stews and root veggies … let's throw open the windows, let in the warm sunshine and mix up a colorful, juicy and delicious Fresh Fruit Cookie Pizza! A rainbow of flavor and a beautiful sight for our winter-weary eyes.

Here are a few tips and hints:
  • Feel free to use any fruit! Get whatever looks the freshest or use your family faves.
  • Shape the cookie dough into an oval and decorate with wavy ribbons of fruit – like an Easter egg.
  • Instead of buying tube sugar cookies – use our recipe: Rose Petal Almond Cookies Recipe; simply pat out the dough instead of making cookies and skip the rose petal frosting.
