There's nothing quite like freshly sharpened pencils. New packs of crayons. Or stacks of crisp, college-ruled notebooks.
It's hard to believe, but many stores already have big displays of back-to-school supplies. Don't worry – there's still plenty of summer left ahead of us. And personally, I'm not ready to send my baby off to kindergarten (gulp) or start shopping for that perfect Pokémon backpack quite yet.
But summer can actually be the perfect time to try some new weeknight recipes, so you're ready to roll once school's back in swing. Just think of it as doing your homework. (See what I did there? Ok, I'll stop now.)
Anyway, that's why we decided to make a couple meals from the Family Faves 10-Meal Kit this week. (If you're not familiar with the kit, it has everything you need to make more than 10 kid-approved dinners. And honestly, if you have picky kiddos, it's a wonderful way to add a little variety to your weeknight routine.)
First up: Smoky Bacon & Chicken Skillet! Savory chicken. Smoky bacon. Cute bow-tie pasta. All tossed together in a creamy sauce with subtle BBQ spices and melty Monterey Jack cheese. Best of all, this delicious and easy skillet comes together on your stovetop in only 30 minutes. (As a busy mom, these types of quick, home-style dishes are my favorite!) Plus, this hearty one was a hit with our whole family.
HOW TO STIR UP THE SKILLET

Step 1: Slice & Dice
Heat a large kettle of water on high on your stovetop. Then grab a cutting board or two! Trim and cut 1 pound boneless, skinless chicken breasts into cubes.
And roughly chop up ½ pound of sliced bacon.
Step 2: Prep Your Pasta
Once your water is boiling on the stove, add a little salt and 12 ounces farfalle (bow-tie) pasta. Prepare it as directed on the package; drain your noodles and set 'em aside.
Step 3: Sauté Bacon & Chicken
Meanwhile, sauté bacon in a large skillet over medium-high until it's crispy. Place on paper towels and drain, leaving about a tablespoon of bacon drippings in the skillet.
Add your chicken to the skillet with a little Garlic Garlic™ Seasoning, salt and pepper; sauté about 5 minutes.
Step 4: Simmer & Serve
Stir in your cooked pasta, 1½ cups warm milk and 1 packet of Smoky BBQ Cheese Ball Mix.
Bring to a simmer for 1-2 minutes. Remove from heat. Stir in bacon and 2 cups shredded Monterey Jack cheese until melted and smooth.
That's it! You've got a fun, family-friendly dinner ready on the table in only 30 minutes. And no matter when school's back in session, you'll be guaranteed to get high marks.
Tips & Hints
- Serve with Steamed Broccoli with Garlic Butter, mixed greens, sliced French bread or fresh fruit.
- Feel free to substitute whatever shape/style of pasta you prefer, like penne or rotini.
- Try adding a handful of veggies to your skillet. Chopped asparagus or sliced mushrooms would be delicious!
- Make sure you use a large/deep skillet, since this is a very generous recipe. (Next time I'll actually freeze half of it, so we'll have a heat-and-serve dinner ready in the freezer.)
