In contrast to many parts of the country, Easter in Minnesota is generally an inside-only affair. Since it's still too cold to really enjoy the "spring" weather, we like to make this celebration as fresh and sweet as possible. Delicious desserts and sweet snacks are a big part of that.

Three of my favorite products are Absolutely Almond Pound Cake Mix, Truffle Fudge Brownies and new Luscious Lime Cheesecake Bar Mix. Recently I spent a little time gleaning ideas from Pinterest and used these three mixes to make fun and festive treats that would be perfect for any spring celebration.
Truffle Fudge Easter Eggs. I find making cake pops to be a messy business. But Truffle Fudge Brownie Mix holds together beautifully without a sticky "binder." I had a lot of fun dipping my fudgy eggs in pastel candy coating and decorating them like Easter eggs. Tucked in a little basket, they're an eggcelent bite-sized treat.
Luscious Rainbow Mini No-Bake Cheesecakes. There is just something so fresh and light about citrus flavors, which makes Luscious Lime Cheesecake Bar Mix a perfect fit for spring. I tinted the batter with four pretty colors and layered them on graham cracker crusts in a jumbo muffin pan. These no-bake beauties are sized just right for individual desserts.
Absolutely Almond Robin's Egg Layer Cake. The sight of a robin is one of the first signs of spring, so a layer cake in bright, robin's egg colors is sure to bring a few smiles. The delicate almond flavor of Absolutely Almond Pound Cake Mix pairs nicely with buttercream frosting, and a little coconut "nest" of malted robin's egg candies adds a fun flourish.
