One of the reasons I love to cook is because food can bring joy and comfort to others. A few years back, my mother-in-law was suffering terribly from cancer treatments. She hadn't eaten anything substantial in weeks, and we couldn't seem to find anything that appealed to her.
Then one day I impulsively grabbed a chicken salad sandwich as I left to visit her. I was sure she would turn it down, but for some reason I brought it anyway. And then ... she ate it! The whole thing! It was a small miracle – her face brightened up, we had a wonderful chat, and it is a memory I will never forget.
So this week, make a memory. Bring a chicken salad treat to a friend or a neighbor. And save some for yourself – it's delish!
