Caramel Pumpkin Pie Bites

What is the favorite part of everyone's holiday? The pie! No matter how full you are, you can't pass it up. So how can you make pie even more irresistible for your upcoming holiday gatherings? You make mini one-bite pies. I highly recommend this recipe, especially if you're planning to prepare big family meals. It's incredibly easy, tastes just like pumpkin pie and you won't have any extra baking to do! You'll save a pile of time in the kitchen and your guests will love that they can have as many bites of pie as they'd like.

Using an electric mixer, whip 1 cup heavy whipping cream until soft peaks form, about 5 minutes. (The peaks will fall over when the beaters are lifted.) Slowly add ½ cup powdered sugar to combine. Set aside. Combine 15 oz. can pumpkin, 8 oz. softened cream cheese, 1 tsp. pumpkin pie spice and ½ tsp. salt in another bowl. Stir until smooth. Gently fold this mixture into the whipped cream. Place mixture into a one-gallon resealable plastic bag. Squeeze mixture to one corner of the bag; snip the corner to use as a piping bag. 

Add a small amount of Creamy Caramel Sauce to the bottom of each fillo shell.

Fill each cup with the pumpkin mixture.

Tip: Use leftover pumpkin mixture as a spread for bagels or English muffins.

Tips and Hints

  • Whip your cream cheese a little with an electric mixer before mixing in the pumpkin. It'll blend a little easier.
  • The pecans can be omitted. My family doesn't particularly love them so we added a dab of whipped cream on some of ours. They looked just as beautiful and tasted amazing, too!
  • These can be made ahead of time and refrigerated until serving. I would wait to top them until they're served.
  • My 12-year-old was able to pipe in the filling. I showed her how to do a couple and then she took over. She did great.
