I recently went through my deep freezer, only to find I had roughly 15 old bananas hanging out in there. Fifteen. When the bananas start to go spotty, no one wants to eat them, so I toss them in the freezer for a later recipe. Fifteen bananas later and I think I have a problem. It’s a good problem, though, because my family loves banana bread.
After many loaves of banana bread and a banana-free freezer, my family got used to having a little treat with their eggs at breakfast. That’s when I saw I had a box of Blueberry Bar Mix in my pantry and decided to give it a little breakfast bar flair. (Can you tell I’m in the cleaning-out mode?)
I added some sliced almonds and yogurt covered crasins, put it in the Silicone Bar Pan and voila: The perfect sweet sidekick to your breakfast! You can really add any nut or dried fruit to these bars and it bakes up great! Serve with a side of eggs or eat it all by itself – it’s great for breakfast or a little snack. (If they make it past breakfast time, that is.)
